Makes 1 loaf
1⅔ cup oat flour (use regular oats and just use blender to mix)
4 ripe bananas, mashed or blended
½ cup coconut oil, melted
1/3 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon (optional)
Preheat oven to 350°F. Grease a loaf pan with coconut oil spray or butter.
Mix all other ingredients together in a large bowl and pour into the greased pan. Bake for 45 minutes to 1 hour until the center is cooked through. You can easily check this with a toothpick of knife inserted in the middle of the loaf.
*** I have done this recipe without maple syrup and we loved it. Its perfect for tiny humans if you use very ripe bananas. I have done it with 4tbs of maple syrup and I feel it works well****
***To make it into Zucchini Banana Bread
Optional: add one medium shredded zucchini instead of one of the bananas. Use towels to soak up the water. Depending on your oven make sure to check on it. Sky loves this and so does Daniel. Please NOTE this can be tricky to get the bread to bake right cause the zucchini makes it more watery!
